Chez Jean Claude is a Swiss patisserie in Subiaco and was certainly a bustling little shop at 7am in the morning when i went in to pick up the cake. Alot of baking was going on right in front of me and even at that time in the morning i was lining up in a queue!
The Opera Cake is made up of thin layers of chocolate ganache, light almond biscuit and coffee butter cream. It is a perfect coffee cake and not too rich or creamy.
It really was a beautiful coffee cake and I indulgently ate almost the whole thing, you know when things are out of hand when you start replacing your morning muesli with cake!
This is a very European cake, each country has its different variations. My bf’s mum who has Croatian roots also makes this style cake but with a juicy caramel layers.
